Vinification: Static clarification (débourbage), spontaneous fermentation with natural yeasts in used French oak and acacia barrels (228 l & 500 l); aging on the full lees with bâtonnage until the end of fermentation, followed by bottling
Maturation: 12 months aging in wood on the lees, followed by bottle aging
Alcohol content: 13% vol
Tasting note: Pale straw yellow in the glass. On the nose, a puristic, minerally freshness with citrus and white fruit notes—green apple, pear, and lemon—along with subtle herbal nuances and a light wood spice. On the palate, the wine impresses with a creamy texture, lively acidity, and an elegant, minerally and herbaceous depth that lingers on the long finish.
Food recommendation: Ideal with seafood, smoked fish, chicken, or light Mediterranean dishes; also an excellent accompaniment to aperitifs. Serving temperature: 8–10°C.
