Vinification: The grapes come from various plots with different soils, exposures, and altitudes to replicate the region's traditional white blends. After manual harvesting, a cold maceration with the skins takes place for 24–30 hours, followed by static settling at cold temperatures for 48 hours. Fermentation takes place in stainless steel tanks with indigenous yeasts.
