Grape variety: Mainly Roussanne (approx. 95%) with a small proportion of Clairette (~5%) 

Production: Very limited production – small quantity bottles

Origin: AOP Ventoux, Rhône Valley, in the biodynamically managed environment of the Domaine de la Coquillade

Vineyard: Grapes come from biodynamically cultivated vineyards around the Hotel Coquillade, with a focus on terroir expression and biodiversity

Soils: Calcareous, iron-rich soils with a red, sandy texture – well-drained and nutrient-rich

Orientation: Not specifically specified

Climate: Mediterranean climate with hot days, cool nights – ideal for a balance between freshness, fruit and structure

Vinification: Maceration and pressing of whole berries, spontaneous fermentation in amphorae and barriques – aging on the fine lees for approx. 6 months

Maturation: Several months of ageing on the fine lees in amphorae and used barriques

Alcohol content: Approx. 13% vol

Tasting note: Clear golden yellow. On the nose, aromas of fig, melon, peach, white peach, and citrus notes, subtly underpinned by a salty mineral structure. On the palate, powerful, fresh, with texture, honey notes, and a long, structured finish.

Food recommendation: Perfect accompaniment to seafood, fish dishes, fine Mediterranean cuisine or as an elegant aperitif
