Origin: DO Ribeiro, single vineyard “O Taboleiro” (Leiro, Ourense)

Vineyard: Single vineyard on slate soils (xistos) and granitic sand. Terraced vineyard (socalcos), trained in espaliers with a double Royat cordon. Planting density: 5,000 vines/ha. Sustainable cultivation without synthetic chemicals, with the utmost respect for nature.

Climate: Atlantic with high rainfall. The 2023 vintage was characterized by climatic contrasts: a wet March, a dry April, and periods of thunderstorms in May. The warm summer allowed for good ripeness despite some mild weather-related losses – the harvest took place two weeks earlier than usual. Careful manual selection in the vineyard and on the sorting table was undertaken.

Vinification: Hand-harvested into 18 kg crates, sorted on a sorting table. Gentle pressing, selection of the must from the first pressing (“Mosto Yema”), static pre-clarification. Spontaneous fermentation with native yeasts at low temperature. Aging in stainless steel tanks with a 10% share in barriques, followed by at least one month of bottle aging. Bottling on a “flower day” in December 2024.

Maturation: Aging in stainless steel tanks and 10% in barriques. One month of bottle aging before release.

Alcohol content: 13.5% vol

Tasting note: Bright, brilliant yellow. The nose reveals aromas of pear, nectarine, and melon, underpinned by mineral notes and a hint of lemon zest. The palate is lively and precise on the attack, then fleshy, with vibrant citrus flavors and juicy acidity. The finish is clear, with mineral tension and an invigorating, bitter-fresh finish.

Food recommendation: Ideal accompaniment to lobster, crayfish, grilled langoustines, creamy soft cheeses, fresh pasta dishes and lukewarm salads.
