Grape variety: 50% Sousón, complemented by Brancellao, Ferrol and Mencía – an indigenous grape variety composition with depth, freshness and elegant fruit.
Production: Limited edition of 20,000 0.75 l bottles and 150 magnum bottles – selectively hand-picked and vinified with the utmost care.
Origin: DO Ribeiro, Galicia – from the traditional Coto de Gomariz winery.
Vineyard: Young vines from vineyards such as Vilerma, Ramón, Inferniño, O Pazo, Taboleiro, Taina, and others – cultivated in a natural way without the use of chemical or toxic substances, with espalier training and high planting density (up to 7,200 vines/ha).
Soils: Sábrego – a mixture of granitic sand and clay – adds minerality and ensures freshness and depth to the wine.
Orientation: Terraced hillsides (Socalcos) and gentle slopes – optimal sunlight and air circulation for even ripeness and aromatic density.
Climate: 2022 was an unusually hot and dry year – thanks to deep water reserves, the Gomariz plots remained vital, healthy, and aromatically balanced.
Vinification: Manual harvest in 18 kg crates, grape selection, temperature-controlled fermentation with the vineyard's own yeasts, short maturation period (4 months) in barriques for rounding off, followed by a rest period in stainless steel tanks and in the bottle.
Maturation: 4 months in barriques, followed by fine-tuning in tanks – at least one month of bottle rest before sale.
Alcohol content: 13.4% vol – balanced and moderate, with a fine structure and a long finish.
Tasting Notes: Dark berries, cassis, licorice, a hint of tree bark, and delicate herbal notes. On the palate, elegant, clearly structured, with mineral depth, ripe tannins, and a long, harmonious balance.
Food pairing: Versatile – ideal with octopus a la gallega, lamb, veal, but also with grilled vegetables and other Mediterranean dishes; serve at approximately 18°C.
