Vineyards: Old vines planted in a Royat double cordon system, with generous spacing to avoid competition between the plants and maximize the quality of the grapes
Soils: Granite and slate, steep slopes along the Sil Canyon
Climate: Atlantic climate with mild temperatures, ideal for a slow and even ripening of the grapes
Vinification: The vinification of Viña Aurita Tinto 2020 is carried out with the utmost care and minimal intervention to preserve the wine's authenticity. The grapes are harvested by hand between late August and early September and carefully selected. After complete destemming, fermentation takes place spontaneously with indigenous yeasts, without the addition of enzymes, nutrients, or other additives that could alter the wine's character.
After fermentation, the wine remains on the skins for 2–3 days before being clarified without pressing. The pressed wine is not used or added to the main wine, but is used for other purposes, such as vinegar production, or discarded. Clarification occurs exclusively through natural sedimentation and repeated racking (2–3 times a year), without the use of pumps, to ensure the purity of the wine.
During fermentation, the temperature is never kept above 25°C to preserve the aromas and natural balance of the wine. This meticulous process guarantees a wine that perfectly reflects the essence of its terroir and the philosophy of traditional craftsmanship.
Aging: At least 10 months in stainless steel tanks, without the use of wood, to preserve the pure character of the wine.
Bottling: Between July and November 2021, depending on the harvest and conditions.
Viña Aurita Tinto 2020 displays an intense ruby red with vibrant reflections. The nose reveals aromas of red berries such as cherries and raspberries, accompanied by subtle floral and spicy notes that highlight the authenticity of the Mencía grape. A hint of minerality hints at the region's slate and granite soils.
On the palate, the wine is elegant and lively, with well-integrated acidity that lends freshness and balance. The tannins are silky and finely structured. Fruity notes dominate, accompanied by subtle spice and a long, minerally-driven finish.
