Year: 2018

Grape variety: 100% Sousón

Production: Very limited edition of 1,080 bottles (0.75 l)

Origin: DO Rías Baixas

Vineyard: Pergola-trained with 800 vines per hectare at approximately 100 m elevation. Yield: approximately 4,000 kg/ha. Southwest exposure with optimal sun exposure.

Soils: Granite weathering soil (Entisol), sandy-loamy structure

Orientation: Southwest

Climate: Atlantic climate with continental influences – the 2018 vintage allowed for slow, even ripening, giving the wines a dense structure and brilliant freshness.

Vinification: Hand-harvested in perforated crates, careful selection on the sorting table. Complete destemming, spontaneous alcoholic fermentation in open 500-liter barriques with twice-daily punching down of the must. Vertical hydraulic pressing. Spontaneous malolactic fermentation.

Maturation: 12 months in new French oak barrels

Alcohol content: Not specified

Tasting note: A seductive and delicious red wine. Rich aromas of black fruits (blackberries), minerality, ink, and raspberries on the nose. On the palate, lush, round, and powerful, supported by a dense structure and juicy, lively acidity. A pleasure-giving wine with character and depth.

Food pairing: Ideal with grilled meat, lamb chops, game, braised dishes, and mature cheeses. It also pairs perfectly with intense vegetarian or mushroom dishes.
