Climate: Atlantic climate with maritime influences. The 2023 vintage was characterized by moderate temperatures and ideal conditions for slow, even ripening, resulting in fresh acidity and great aging potential.
Vinification: Hand-picked in perforated crates, careful selection on the sorting table. Complete destemming and gentle pressing with an air press. Cold settling, spontaneous fermentation at controlled temperatures (12–15°C).
Maturation: 6 months on the fine lees with regular batonnage in stainless steel tanks and large oak barrels. Following this, 6 months of bottle aging in the Atlantic at a depth of 12 meters.

Tasting note: Intense straw yellow, clear and brilliant. Fresh and maritime on the nose, with a subtle salinity. Full-bodied, fleshy, and juicy on the palate, supported by a lively, very fresh acidity. The finish is long and saline, highlighting the mineral character of the terroir.
Food pairing: Ideal with oysters, grilled fish, seafood, sushi, as well as light Mediterranean dishes or goat cheese. A versatile companion for fine dining.
