Climate: Mediterranean microclimate with Atlantic influence

Vinification: Static débourbage and spontaneous fermentation with natural yeasts, without temperature control, in used chestnut and French oak barrels (750 liters). Fermentation takes place on the full lees with gentle bâtonnage until complete fermentation. Clarification, aging in stainless steel tanks, and bottling follow.

Maturation: Seven months of aging in stainless steel tanks without yeast, followed by bottle aging.

Alcohol content : 13%

Tasting note: the 2016 Escalada presents itself in the glass with a deep golden hue and a fine viscosity. On the nose, it displays pronounced maturity with notes of candied citrus, orange blossom, fennel, and ripe yellow fruit, accompanied by tertiary aromas such as honey, brioche, and a hint of nut. On the palate, the wine is complex, dense, and silky, with balanced acidity and a long, mineral finish. The maturity lends it additional depth and complexity without losing any of its freshness.
