Climate: Mediterranean microclimate with Atlantic influence
Vinification: Static débourbage and spontaneous fermentation with natural yeasts, without temperature control, in used chestnut and French oak barrels (750 liters). Fermentation takes place on the full lees with gentle bâtonnage until complete fermentation. Clarification, aging in stainless steel tanks, and bottling follow.
Maturation: Seven months of aging in stainless steel tanks without yeast, followed by bottle aging.
Alcohol content: 13%
Tasting note: in the glass, the 2012 Escalada presents a deep gold hue with brilliant reflections. The nose reveals complex aromas of ripe citrus fruits, dried apricots, honey, roasted nuts, and subtle floral notes. On the palate, the wine is full-bodied and well-structured, with lively acidity that adds freshness. Mineral notes reflect the slate terroir, and the finish is long-lasting with an elegant salinity.
