Vineyard: Small plots around the Can Ràfols farm and adjacent land on the Mas Sunyer estate. Organically farmed, no irrigation, hand-harvested.
Soils: Very shallow, calcareous loam soils with up to 40% active limestone on dolomite limestone from the Triassic and Cretaceous periods; typical of the karst region of the Massís del Garraf.
Orientation: Various small plots, mostly on a slope
Climate: Mediterranean climate with hot, dry summers and a cooling influence from the sea. Low rainfall.
Vinification: Gently pressed, without destemming. Spontaneous fermentation of the grape varieties separately in stainless steel tanks at a controlled temperature. Second fermentation in the bottle according to the traditional method, 30 months of bottle aging, light clarification and filtration, no dosage.
Maturation: 30 months bottle aging on the lees
Alcohol content: 11.5% vol.
Tasting Note: Bright yellow in the glass. On the nose, aromas of white flowers, candied fruit, and lemon zest with a subtle toasted note. On the palate, lively and fresh with citrus, almond, and a mineral aftertaste. Long, refreshing finish.
Food pairing: Excellent with risotto, garlic prawns, omelets and white fruit desserts.
