Vineyard: Single vineyard at over 700 m altitude with special vine training for the delicate, long shoots of the Bronx grape; organic farming without herbicides, pesticides, or synthetic fertilizers; long, loose-berried grapes with good ventilation.
Soils: Calcareous soil with diatom sediments from aquatic microorganisms, low in nutrients but with deep moisture retention – ideal for this rare seedless variety.

Climate: Very dry, Mediterranean climate with high levels of sunshine and strong day-night temperature differences due to the altitude; perfect ripeness while maintaining freshness.
Vinification: Hand-harvested into 10-kg crates at optimal ripeness, followed by drying of the grapes on mats to concentrate sugars. Spontaneous fermentation, stopped by cold. No wood aging to preserve the floral and fruity aromas of the variety.
Maturation: No barrel aging
Alcohol content: 15% vol.
Tasting Note: Bright, ripe golden yellow with orange reflections. On the nose, intense aromas of exotic, overripe fruits such as passion fruit, mango, and cherimoya, along with yellow blossoms, marigold, and a hint of pollen. On the palate, voluminous, creamy, and fresh at the same time, with a long, luscious finish.
Food pairing: Excellent with mild, creamy cheeses, duck liver pâté, poultry terrines and desserts with yellow fruits, vanilla, puff pastry or fried pastries.
