Grape variety: 100% Caladoc – an autochthonous grape variety whose natural sweetness, texture and fruitiness are reminiscent of port wine
Production: Very limited edition – only about 1,000 bottles per vintage, exclusively from selected, fully ripe grapes
Origin: AOP Ventoux, Luberon region; organically farmed by Domaine de la Coquillade
Vineyard: Average 25-year-old vines on characteristic, iron-rich limestone soils – ideal conditions for structure and aromatic intensity
Soils: Weathered limestone with a high iron content, which gives the soil its typical ochre-red color and supports the development of aromas
Orientation: South to southwest facing vineyards.
Climate: Mediterranean climate with intense sunshine, supports the ripening of the grapes and the development of natural sweetness
Vinification: Spontaneous fermentation with the vineyard's own yeasts; fermentation interrupted by the addition of alcohol to preserve the fruit sweetness; subsequent maturation for 12 months in barriques and tonneaux
Maturation: 12 months in wooden barrels (barriques and tonneaux) to harmonize structure, sweetness and aromatic depth
Alcohol content: Approx. 15% vol – natural sweet wine with a rich body and balanced sweetness
Tasting Note: Deep ruby red; intense aromas of black cherry, blackberry, sloe, and plum. Velvety and elegant on the palate with notes of chocolate and ripe fruit—complex, harmonious, and seductive.
Food recommendation: Excellent with hearty game or lamb, mature blue cheese and dark chocolate desserts – or on its own as an enjoyable finale
