Origin
Tharsys is named after the legendary figure said to have founded Requena. Vines have been grown on the site in Requena since the 16th century, and the estate has an old cellar dug into the rock.
In October 2025 the European Commission recognised the estate as its own protected designation of origin, a Vino de Pago under the name DOP Tharsys. In Spain this is the category for single estates with their own terroir.

The people
Vicente García is known in the region as the «father of Cava in Requena». In 2002 he founded Pago de Tharsys with his wife Ana Suria, starting with 20,000 bottles a year.
Today their daughter Rebeca García runs the estate as winemaker, the second generation.
Philosophy
The vines around the estate are farmed organically.
The conversion began about 15 years ago, and today almost all the wines from the estate's own vineyards are organic, including the Carlota Suria Bobal and the Alegría. The estate also runs on solar power and saves water.
Cava from Requena
All with a second fermentation in the bottle. The Millésime Brut spends 24 months on the lees, the Brut Nature in the ceramic bottle 40 months, and the Único is a Blanc de Noirs made from Garnacha.

Terroir
Limestone and clay at around 700 metres. The Albariño plot in the south lies on white, chalky albariza.
Bobal for the reds, Chardonnay and Garnacha for the sparkling wines, Albariño for the Vendimia Nocturna. Plus Merlot and Cabernet Franc in the Selección Bodega, and the rare seedless Bronx for the sweet wine.
Mediterranean with a continental influence, with nights much cooler than the days. The team picks the Albariño at night so that the grapes reach the cellar cool.
In the cellar
All the sparkling wines go through their second fermentation in bottle, by the traditional method. Time on the lees ranges from 24 months for the Millésime Brut Reserva to more than 50 months for the Brut Rosé Gran Reserva in its ceramic bottle.
The still wines ferment spontaneously with native yeasts, in steel tanks, amphorae or wood depending on the wine. The Bobal by Diana García, from vines planted in 1940, ferments in French oak barrels.
Pago de Tharsys is known for Cava. Our pick is still a still wine: the Vendimia Nocturna, pure Albariño from one hectare in the south of the estate. The vines come from Galician stock and were planted in 1985.
The grapes are picked at night and are in the cellar 15 to 20 minutes later. The wine then spends two months on its fine lees. Drink it with seafood, octopus or sushi.

Vicente García. He founded Pago de Tharsys in Requena in 2002 with his wife Ana Suria, in the D.O. Utiel-Requena in the province of Valencia, and today their daughter Rebeca works with them. The estate started out with 20,000 bottles a year. The vines grow at 700 metres on limestone and clay.
Yes, a large share of the Pago de Tharsys wines we stock have bubbles. All get their second fermentation in the bottle, using the traditional method. Time on the lees runs from 24 months for the Millésime Brut Reserva to more than 50 months for the Rosé Gran Reserva in the ceramic bottle. The whites are Chardonnay, the rosés and the Único are Garnacha. Brut Nature means no dosage.
The reds centre on Bobal, the region's native grape: Carlota Suria, Alegría and the Bobal by Diana García. For the sparkling wines the estate uses Chardonnay and Garnacha. The Vendimia Nocturna is pure Albariño, the Selección Bodega 2010 is Merlot and Cabernet Franc, and the sweet wine is made from Bronx, a rare seedless variety.
The Vendimia Nocturna grows on a one-hectare plot in the south of the estate, at 700 metres on white, chalky Albariza soils. The vines came from Galician stock and were replanted in 1985. Picking happens at night to keep freshness and aroma, and the grapes reach the cellar 15 to 20 minutes later. It spends two months on the fine lees and suits seafood, octopus and sushi.
Start with the Carlota Suria Organic Bobal 2021 for CHF 19, from hundred-year-old vines with twelve months in French oak. The Alegría 2023 is organic too, from old vines, CHF 22. If you want more, go for the Bobal by Diana García 2021: vines planted in 1940, only 5,600 bottles, fermented in wood, CHF 29. All three suit meat and game.
A mature red of 85 percent Merlot and 15 percent Cabernet Franc, made in 3,183 bottles. It spent twelve months in one-year-old French oak barrels and is now more than 15 years old. On the nose, plum, cedar and forest floor. Serve it at 16 to 18 °C in a wide glass, with game or dishes with porcini.
Yes, the Vino Dulce Natural, made from 100 percent Bronx, a rare seedless variety. After picking, the grapes dry on mats, and fermentation is stopped by cold. It is a non-vintage wine, 3,200 bottles of 0.5 litres, with 15 percent alcohol. Expect passion fruit, mango and yellow flowers. It goes with creamy cheese, duck liver pâté and desserts with yellow fruit.
The Bobals cost between CHF 19 and 29, the sparkling wines between CHF 25 and 35, and the Selección Bodega 2010 CHF 45.
