Vineyard: 1-hectare plot in the southern part of the estate at 700 meters above sea level. This historic site features highly calcareous, white albariza ("toba") soils derived from freshwater sediments over 30 million years old. Old vines dating back to the 1960s, replanted in 1985 from Galician planting material.
Soils: White, limestone-rich albariza soils with high water retention capacity and a distinct mineral profile. Promote small, concentrated grapes with intense aromas and fresh acidity.
Orientation: South
Climate: Continental climate with Mediterranean influences. The 2024 vintage was slightly cooler than 2023, with a rainy spring and a dry, sunny summer. Temperature fluctuations between day and night facilitated slow, even ripening and excellent aromatic balance. The harvest took place during the night of September 8th to preserve freshness, acidity, and varietal character.
Viticulture: Certified organic. No herbicides, pesticides, or synthetic fertilizers. Strict manual harvesting in small 10 kg crates, selected in the vineyard, and immediate processing in the cellar within 20 minutes of harvest.
Vinification: Gentle pressing in a closed system, temperature-controlled fermentation (14–16 °C) in stainless steel tanks. Aging on the fine lees for two months with regular bâtonnage. No wood aging to preserve the pure fruit and minerality of the Albariño.
Maturation: 2 months on the fine lees in stainless steel tanks
Alcohol content: 12.5% vol.
Tasting Note: Delicate straw yellow with silvery reflections. On the nose, fresh aromas of white flowers, green apple, peach, and lemon zest, accompanied by mineral and slightly saline notes. On the palate, precise, fresh, and elegant, with harmonious acidity, a fine texture, and a creamy finish. The finish is saline, citrusy, and refreshing.
Food pairing: Perfect with seafood, oysters, ceviche, fried fish, or sushi. It also pairs excellently with Mediterranean rice dishes and vegetarian cuisine with fresh herbs.
