At least 60 months on the lees and no dosage. Golden, with fine bubbles; toasted bread, almond, green apple and a floral note on the nose. Dry on the palate, with clear minerality and fresh acidity that carries a long finish.
The ceramic bottle keeps out light, which protects the wine when you store it for longer. Drink it with seafood, mature cheese or as an aperitif if you like very dry sparkling wine.

Vicente García. He founded Pago de Tharsys in Requena in 2002 with his wife Ana Suria, in the D.O. Utiel-Requena in the province of Valencia, and today their daughter Rebeca works with them. The estate started out with 20,000 bottles a year. The vines grow at 700 metres on limestone and clay.
