A blanc de noirs: white sparkling wine made from red Garnacha Tinta, aged 36 months on the lees. Pale gold in the glass, with white blossom, citrus and toasted hazelnut on the nose, plus brioche and honey. Dry on the palate, with lively acidity and a long, mineral finish.
Open it with food: oysters, fine fish or a creamy cheese. It works as an aperitif too, but we would save it for the table.

Vicente García. He founded Pago de Tharsys in Requena in 2002 with his wife Ana Suria, in the D.O. Utiel-Requena in the province of Valencia, and today their daughter Rebeca works with them. The estate started out with 20,000 bottles a year. The vines grow at 700 metres on limestone and clay.
