The base wine ferments in French oak barrels, and only then does the Chardonnay spend more than 24 months in bottle. Old gold with a very fine mousse; peach, apricot and yellow plum, grapefruit and lemon peel on the nose, plus vanilla, biscuit and butter. Dry and creamy on the palate, with toasted hazelnut and bread crust on the finish.
With no dosage and the oak behind it, it can handle stronger food: smoked fish, grilled meat, aged cheese. It will keep for about five more years in the cellar.

Vicente García. He founded Pago de Tharsys in Requena in 2002 with his wife Ana Suria, in the D.O. Utiel-Requena in the province of Valencia, and today their daughter Rebeca works with them. The estate started out with 20,000 bottles a year. The vines grow at 700 metres on limestone and clay.
