Ageing: 14 months in used 500-litre French oak barrels
Pedro Rodríguez makes A Ponte from old vines on the terraces above the Sil, mostly Mencía with a fifth of Brancellao. Ruby with a violet rim, forest berries, violet and herbs on the nose, some smoke and spice. Fresh on the palate, with silky tannins, juicy acidity and a salty finish.
Serve it with lamb, mushroom dishes or a good Spanish chorizo. We would go for the chorizo, where the acidity stands up to the fat.

The winery
Guímaro is Galician for rebel, and it was what people called Pedro Rodríguez's grandfather. Pedro farms eight hectares on the steep slopes of the Ribeira Sacra and has brought the growers who supply him with grapes round to more sustainable viticulture.

Guímaro is Galician for rebel. It was the nickname of the grandfather of Pedro Manuel Rodríguez, who runs the estate in Sober today, and the nickname became the name of the adega.
