In the glass and in the cellar

Grapes: mainly Mencía, with Caiño, Merenzao, Sousón, Mouratón and Garnacha Tintorera

Vintage: 2022

Production: about 10,000 bottles

Soils: mainly slate

Aspect: south

Climate: Atlantic with continental influences

Vinification: hand-picked, whole bunches only, fermented in open wooden vats, about 50 days of maceration; malolactic fermentation often takes place on skins and stems

Ageing: 8 to 10 months in used 500-litre French oak barrels

Alcohol: 13.5%

Pombeiras is Guímaro's south-facing single plot on slate, and here every bunch ferments whole, stems and all. Deep cherry red with a garnet rim, ripe red fruit, blossom, spice and something mineral. Full on the palate, with integrated tannins, lively acidity and a long finish.

Serve at 14 to 16 °C with grilled meat, game or aged cheese. If you like whole-bunch reds, this is the plot to try.
