Guímaro – the name goes back to the nickname of Pedro Rodríguez's grandfather and means "rebel" in Galician. The young winemaker is himself a rebel, and since 2024, a great honour has been bestowed upon him: one of his wines – "Meixemán" – was named the best wine in Spain by James Suckling!

Origin

Adegas Guímaro is located in Ribeira Sacra, one of Spain’s most spectacular and demanding wine regions, known for its steep slopes and heroic viticulture along the Sil and Miño rivers. Situated in Sober, in the Amandi subzone of Ribeira Sacra, Adegas Guímaro is a winery deeply rooted in its terroir. Pedro produces both single-varietal wines and blends from his vineyards, which lie only a short distance apart. Yet, the microclimatic conditions and soils yield very different wines: the Sil River shapes the wine differently than the Miño River.

The Winemaker

Led by Pedro Manuel Rodríguez, a young winemaker from a family with a long tradition in viticulture, the estate cultivates the region’s extremely steep slopes, often described as “heroic viticulture” because growing grapes here is especially challenging. The Rodríguez family modernized their winery in 1991 and joined the D.O. Ribeira Sacra in 1996. When Pedro took over in 2001, the focus was initially on young red wines. However, a partnership with renowned winemaker Raúl Pérez introduced innovative techniques and marked a shift toward high-quality, terroir-driven wines. Pedro is regarded as one of the bold young winemakers who successfully bridges tradition and innovation.


Philosophy

Guímaro cultivates eight hectares of its own vineyards and also sources grapes from local growers, whom Pedro has encouraged over the years to adopt more sustainable viticultural practices. Guímaro’s commitment to terroir, its innovative techniques, and the collaboration with Raúl Pérez have made the winery a leading name in Ribeira Sacra. The wines are authentic, terroir-focused, and of the highest quality.

    Location and soils The soils in these vineyards are diverse and consist primarily of slate, granite and sand. These different soil types contribute to the complexity and uniqueness of the wines, providing the vines with varying nutrient profiles and drainage properties.

    Vines The combination of steep slopes, diverse soil types and proximity to the River Sil creates a unique microclimate. This favours the cultivation of autochthonous grape varieties such as Mencía, Godello and other local varieties.

    Climate The region has a Mediterranean microclimate with Atlantic influence. Summers are warm, with moderate peak temperatures that allow for slow and even ripening. Nights remain cool, giving the wines their freshness.

Vinification

Vinification at Guímaro emphasizes the use of native yeasts, whole-cluster fermentation, and ageing in both small and large barriques as well as large, used oak vats (foudres). The result is fresh, expressive wines that authentically reflect the terroir.

Distinctive Feature

Guímaro places a strong focus on indigenous grape varieties, cultivating mainly Mencía, complemented by Caiño, Sousón, Brancellao, and Merenzao. This approach promotes biodiversity and preserves the winemaking heritage of the region. The vineyards of Guímaro are located on steep, terraced slopes along the Sil River that date back to Roman times. This “heroic” style of viticulture demands intensive manual labor and highlights the winery’s dedication to quality. Since 2002, the collaboration with renowned oenologist Raúl Pérez has brought innovative practices and the introduction of single-vineyard wines, significantly increasing both the quality and recognition of Guímaro.
