Pedro Rodríguez ferments the Mencía for this wine separately by soil, slate, granite and sand, and only blends it afterwards. It sees no wood. Bright cherry red in the glass, fresh raspberry and cherry with a little blossom on the nose, then juicy acidity, silky tannins and a fruity finish.

The winery
Guímaro is Galician for rebel, and it was what people called Pedro Rodríguez's grandfather. Pedro farms eight hectares on the steep slopes of the Ribeira Sacra and has brought the growers who supply him with grapes round to more sustainable viticulture.

Guímaro is Galician for rebel. It was the nickname of the grandfather of Pedro Manuel Rodríguez, who runs the estate in Sober today, and the nickname became the name of the adega.
