Production: very small production

Origin: DO Utiel-Requena, single vineyard “Sabinilla” in Casas de Eufemia (Requena)

Vineyard: Over 60-year-old, bush-trained Tardana vines, traditionally cultivated using dry-farming techniques. The plot is family-owned and cultivated with the utmost respect for natural balance.

Soils: Clay-sand soils

Climate: The 2024 growing season was characterized by warm temperatures and predominantly dry conditions. The summer months brought elevated temperatures, promoting a slow and even ripening of the grapes. The result was a concentrated and expressive harvest with excellent aromatic intensity, freshness, and a well-balanced acidity structure.

Vinification: Hand-harvested in 15-kg crates, natural clarification of the must by cold and gravity for 24 hours. Spontaneous fermentation with native yeasts. Aging takes place in second-use French barriques with three months of batonnage on the fine lees to enhance complexity and texture.

Maturation: 3 months in barriques on the fine lees with batonnage

Alcohol content: 12% vol (labeled)

Tasting Note: Pale straw yellow with a matte sheen. Complex aromas of peach, apricot, and delicate spice from the barrel aging on the nose. On the palate, the wine is creamy, with distinct stone fruit expression, fine volume, and an elegant, persistent finish.

Food recommendation: Goes with Mediterranean starters, rice and pasta dishes, fresh salads or as an aperitif.
