In the glass and in the cellar

Grape: 100% Albariño

Vintage: 2021

Altitude: 280 m

Soils: shallow, poor slopes full of granite slabs

Climate: Atlantic

Vinification: fermented with native yeasts, aged on fine lees with regular bâtonnage; the wine stays in the cellar until it is ready

Alcohol: 13.0%

Pablo Juncal, Pablo Sáa and Toni Alonso make Tríopo together, from Albariño grown at 280 metres, where the vines stand among granite slabs on very little soil. Stirring the lees gives it a creamy texture: straw with golden glints, ripe citrus, white stone fruit, butter and brioche, plus a distinct salty note. Full on the palate, yet fresh.

We would serve it with scallops, fish in butter sauce or poultry, not ice-cold, so the creaminess comes through.

Toni Alonso makes two white wines, just a few hundred bottles a year. His Quinquenio grows at 280 metres among shards of granite and spends five winters in the cellar before it goes on sale.

Still unsure?

Why do Veigamoura's vines grow on pergolas?

Because of the Atlantic. In the Rías Baixas the climate is mild, it rains regularly and the air is humid. On a pergola the grapes are better protected from the damp and ripen evenly. The granite soils give the wines freshness and minerality, and the sea breeze from the nearby coast adds to it. That is where the salty edge in the glass comes from.
