Climate: Mediterranean microclimate with Atlantic influence
Vinification: Static débourbage and spontaneous fermentation with natural yeasts, without temperature control, in used chestnut and French oak barrels (750 liters). Fermentation takes place on the full lees with gentle bâtonnage until complete fermentation. Clarification, aging in stainless steel tanks, and bottling follow.
Maturation: Seven months of aging in stainless steel tanks without yeast, followed by bottle aging.
Alcohol content: 13%
In the glass, the Escalada 2022 displays a pale golden yellow color with a dense viscosity, indicating a full-bodied character. On the nose, the wine initially reveals distinct terroir notes, followed by aromas of orange blossom, fennel, delicate yeast notes, and hints of pastry and a touch of lactic acid. On the palate, the wine is dense, structured, and creamy with well-integrated acidity and a long, lingering finish.
