At Guímaro, Mundín and San Pedro are made almost the same way; the difference is the river. San Pedro grows on slate by the Sil, Mundín on deep granite by the Miño. The 2021 is deep cherry red, smells of red fruit, spice and herbs, is silky with soft tannins and finishes earthy.

With this wine Pedro honours the colleiteiros, the smallholders who kept Galicia's old varieties alive. Serve at 16 to 18 °C with pasta, white meat, charcuterie or mushrooms; it also copes with some heat.

Guímaro is Galician for rebel, and it was what people called Pedro Rodríguez's grandfather. Pedro farms eight hectares on the steep slopes of the Ribeira Sacra and has brought the growers who supply him with grapes round to more sustainable viticulture.
