Grape variety: 100% Godello
Production: 2,700 bottles (0.75 l)
Origin: DO Ribeiro, single vineyard “O Taboleiro” (Leiro, Ourense)
Vineyard: Plot with "sábrego" soils (granitic sand and clay), planted in terraces (socalcos). Espalier-trained with a double Royat cordon, planting density 5,000 vines/ha. Sustainable cultivation without toxic chemicals, with maximum respect for nature.
Soils: Granitic sand and clay (“Sábrego”)
Orientation: Not specified
Climate: Atlantic climate with high humidity. 2023 was characterized by climatic contrasts: a wet March, a dry April, and a stormy May. A warm summer with good water supply enabled earlier ripening. Selective manual harvesting with precise plot control. The white wines of this vintage exhibit freshness, balance, and elegance.
Vinification: Hand-harvested into 18-kg crates, sorted on a sorting table. Gentle pressing with selection of the "Mosto Yema" (Yema grape), static settling, temperature-controlled fermentation with native yeasts. Aging in stainless steel tanks, followed by at least one month of bottle aging. Bottling on a "flower day" in August 2024.
Maturation: Stainless steel tank, one month bottle storage before release
Alcohol content: 13% vol (declared)
Tasting note: Lemon-green hue. Intense and complex on the nose: citrus and green fruit aromas like lime peel and kiwi, complemented by notes of grapefruit, flint, gunpowder, and aromatic herbs like mint and anise. These impressions are repeated on the palate with freshness, precision, and a long, lemony-mineral finish—almost reminiscent of yuzu.
Food recommendation: Ideal with oysters, lobster, crayfish, grilled langoustines, creamy soft cheeses, fresh pasta or lukewarm salads.
