Vinification: Hand-harvested in perforated crates, careful selection on the sorting table. Complete destemming. Natural alcoholic fermentation in open 500-liter barriques, with manual punching down of the must twice daily ("pigeage"). Vertical hydraulic pressing. Natural malolactic fermentation.
Maturation: 12 months in 500-liter French oak barrels
