Pinot Noir rosé, 36 months on the lees: red fruit, citrus peel, violet, fresh.
Sparkling wine · Pinot Noir · Utiel-Requena, Spain · 0.75 L
Grape variety: 100% Pinot Noir
Production: Cava de Guarda Superior Rosé with a minimum of 36 months of aging on the lees; gentle processing of whole, chilled grapes; pneumatic pressing for the highest must quality; natural cold sedimentation; slow, controlled fermentation; tirage in winter; traditional bottle fermentation and long aging in underground, naturally temperature-controlled cavas.
Origin: Various plots in the area of Utiel-Requena, Spain
Vineyard: The Pinot Noir comes from two different parcels, both situated at an altitude of around 750 meters . The vines grow on clay-limestone soils that give the rosé base wine freshness and fine acidity.
Soils: Calcareous, clayey soils with good drainage.
Orientation: Different plot locations, optimally aligned for early ripening and aromatic balance of Pinot Noir.
Climate: Continental-Mediterranean with strong day-night temperature differences; cool nights preserve freshness, acidity and aromatic clarity.
Vinification: Hand-harvested at the end of August; cooling of the whole grapes; pneumatic pressing to obtain the purest must; natural clarification through cold; slow, temperature-controlled fermentation; blending of the parcels; tirage in January–February; 36 months of bottle aging in cool, underground cavas.
Tasting note: Delicate pink with subtle salmon highlights. The nose offers fine red fruit aromas, citrus peel, floral notes of violets, and a sweet hint of brioche from the extended lees aging. On the palate, it is fresh and lively with finely integrated mousse and balanced acidity; the finish is characterized by ripe red fruit and great elegance.
Food pairing suggestion: Goes perfectly with tuna tartare, salmon sashimi, raw or fried prawns, Mediterranean tapas, creamy risottos or as an elegant aperitif.

The best soils in Utiel-Requena lie around Casas de Eufemia. Héctor Benavente and his team let herbs and shrubs grow between the Bobal vines, because the vineyard is meant to be an ecosystem, not a monoculture.

Héctor Benavente, with oenologist Jean-François Hébrard as consultant. Together with the founding team, he is reviving old vineyards in Casas de Eufemia, in the DO Utiel-Requena inland from Valencia, through permaculture and regenerative farming. The chalky, well-drained soils around the village are said to be the best in the whole appellation, and that is where the bodega's plots lie.
