Rosé Cava from Garnacha and Pinot Noir: raspberry, currant, fine bubbles, very approachable.
Sparkling wine · Grenache, Pinot Noir · Utiel-Requena, Spain · 0.75 L
The Carrasca Negra from Viña de Eufemia was recognized by the specialist magazine VINUM as one of the best sparkling rosé wines, among 800 award-winning rosé wines. The cava was awarded the Silver Medal in the competition.
Grape varieties: Pinot Noir & Garnacha
Production: Traditional bottle fermentation (Método Tradicional) with 12 months of aging on the lees; Brut Rosé without dosage information; hand-harvested at the optimal acidity point; only Mosto flor (30–40% yield); daily lees stirring for approximately 60 days to develop aroma complexity.
Origin: Vineyards in the area of Campo Arcís and Casas de Eufemia, Utiel-Requena, Spain
Vineyard: Organically cultivated Garnacha vineyards near the bodega at Requena; Pinot Noir plots in Campo Arcís; trained in trellis form.
Soils: Calcareous, sandy-loamy soils of medium depth and good drainage.
Orientation: Various locations in the hilly landscape of the region (depending on plot and grape variety)
Climate: Continental with Mediterranean influences. Hot days and cool nights keep the acidity and the aromatic freshness.
Vinification: Selection of grapes with optimal acid balance; cooling of whole bunches; pressing without destemming or crushing, only musto flor; natural pre-clarification (approx. 12 hours); fermentation at 16 °C; daily bâtonnage of the fine lees for about 60 days; tirage in January; bottle aging for 12 months with additional lees movement after six months for liquefaction.
Tasting note: Delicate nude pink with shimmering reflections. On the nose, fresh raspberries, red currants, and blueberries, accompanied by fine floral notes such as orchid. On the palate, very fine, elegant, and persistent perlage; harmoniously integrated with the acidity; a delicately exotic, refined finish.
Food pairing suggestion: Ideal with sushi, sashimi, marinated tuna, prawns, grilled vegetables, Mediterranean appetizers, tempura or as a fresh, elegant aperitif.

The winery
The best soils in Utiel-Requena lie around Casas de Eufemia. Héctor Benavente and his team let herbs and shrubs grow between the Bobal vines, because the vineyard is meant to be an ecosystem, not a monoculture.

Héctor Benavente, with oenologist Jean-François Hébrard as consultant. Together with the founding team, he is reviving old vineyards in Casas de Eufemia, in the DO Utiel-Requena inland from Valencia, through permaculture and regenerative farming. The chalky, well-drained soils around the village are said to be the best in the whole appellation, and that is where the bodega's plots lie.
