Vineyard: Old bush vines ("en vaso"), approximately 77 years old, cultivated using dry-field methods. Natural cultivation without herbicides or synthetic additives.
Soils: Sand, clay and gravel mixture with a distinct mineral profile.

Climate: Mediterranean with continental influences; 2024 was a balanced year with slightly cooler nights during the ripening phase, resulting in particularly aromatic and fresh Bobal grapes.
Vinification: Hand-harvested into 18-kg crates. De-stemming, gentle crushing, and approximately five days of maceration. Gentle pressing and aging in 600-liter clay amphorae .
Aging: 5 months in clay amphorae under a layer of flor yeast (“velo flor”), which gives the wine additional complexity and a delicate, slightly saline character. No fining, no filtration, and no addition of sulfites.
Alcohol content: 12.5% vol
Tasting Note: Bright ruby red. On the nose, fresh red fruits, pomegranate, dried herbs, and subtle floral notes. On the palate, elegant, juicy, and lively with fine minerality, a round texture, and a subtle saline freshness. A long, balanced finish with a delicate balsamic note.
Food pairing: Excellent with Mediterranean dishes such as fried fish, paella, pasta with vegetables, white meats, or mild cheeses. An authentic, artisanal Bobal with energy, precision, and character.
