Grape variety: 100% Tardana

Production: Small production from a single plot; artisan-produced Orange Wine.

Origin: Las Monjas – Venta del Moro (Valencia), approx. 700–750 m above sea level.

Vineyard: 40-year-old bush vines (“en vaso”) cultivated in dry farming. Organically managed plot without herbicides or synthetic additives.

Soils: Sand and gravel soils ("arena y canto rodado") with good drainage and a mineral character.

Climate: Continental climate with Mediterranean influence. Dry conditions and low rainfall promote healthy grapes and precise aromatics.

Vinification: Hand-harvested in 18kg crates. The grapes are destemmed, lightly crushed, and fermented with the skins for approximately 30 days, completing both alcoholic and malolactic fermentation. The wine is then pressed. 75% matures in stainless steel tanks, 25% in used 225-liter French oak barriques for five months. Before bottling, both batches are blended. No fining, no filtration, and no added sulfites.

Aging: 5 months aging in stainless steel and partly in French oak barriques. Subsequent blending of the individual batches before bottling.

Tasting notes: Bright orange with golden reflections. On the nose, pear, honey, dried peach, orange peel, and delicate notes of vanilla and spices. On the palate, juicy and approachable with balanced acidity, light structure, and aromatic depth. The long, spicy finish highlights the distinctive character of this rare indigenous grape variety.

Food pairing: Excellent with Mediterranean cuisine, grilled fish, rice dishes, oriental spices, aged sheep's cheese, or grilled vegetables. A characterful Orange Wine with a lot of personality that authentically interprets the almost forgotten Tardana grape variety.
