Vinification: hand-picked into 15- to 20-kg crates, sorted, cold maceration, spontaneous fermentation without added yeast in 300-litre French oak barrels
Ageing: 6 months on fine lees in French oak barrels
The only one of the three Ourive wines on granite rather than slate, facing south-west. Here Treixadura smells of blossom, grapefruit and apricot, with the oak noticeable but integrated. Creamy, almost oily in texture, with fruit, fine spice and a long finish where the barrel still shows a little.
Serve it with fish, poultry or a delicate vegetarian dish. We would not serve it too cold.

María José Yravedra is one of Spain's first women winemakers. With her husband Felipe she brought the old bodega on the Sil back to life in 2010, and since then the wine there has moved by gravity alone.
