Vinification: hand-picked into 20-kg crates, sorted at the winery, fully destemmed, 5 hours on the skins, then run off by gravity; spontaneous fermentation without added yeast in French oak barrels
Ageing: 3 months on fine lees, 6 months in French oak barrels; racked by gravity only, without pumps
Alcohol: 12.5%
Bottle: recycled glass, white-printed label, natural cork
Rosé is rare in the Ribeira Sacra, and this one comes from four red varieties that spent just five hours on their skins. It then ferments in barrel and stays six months in wood. The colour is a bright salmon pink, the nose red berries and citrus; silky and creamy on the palate, very fresh, with a lemony minerality.
Serve at 9 to 11 °C with seafood, a summer salad or Asian dishes. We would open it with a Thai prawn curry.

The winery
María José Yravedra is one of Spain's first women winemakers. With her husband Felipe she brought the old bodega on the Sil back to life in 2010, and since then the wine there has moved by gravity alone.

Ronsel is the wake a boat leaves behind. The bodega sits right at the bottom of the steep slopes of the Sil, near Sacardebois, looking across to the vineyards of Amandi. The vines belong to the D.O. Ribeira Sacra.
