Only 650 bottles of Caiño from the slopes near Parada de Sil, named after the canyon of the Sil. Here Caiño smells of smoke and liquorice with something mineral. The palate has plenty of acidity and just 12% alcohol, and liquorice and spice run through to the long finish.
Its acidity makes it a red you can also drink with grilled fish, at 17 °C. Mushrooms and aged cheese work just as well.

The winery
María José Yravedra is one of Spain's first women winemakers. With her husband Felipe she brought the old bodega on the Sil back to life in 2010, and since then the wine there has moved by gravity alone.

Ronsel is the wake a boat leaves behind. The bodega sits right at the bottom of the steep slopes of the Sil, near Sacardebois, looking across to the vineyards of Amandi. The vines belong to the D.O. Ribeira Sacra.
