Climate: One of the wettest springs since 1961 was followed by a warm, dry July and August of 2024. These conditions allowed for optimal phenolic ripeness with excellent acid balance – the result: aromatic, vibrant white wines.
Vinification: Hand-picked into 18-kg crates, careful selection. Gentle pressing, must separation. Static pre-clarification, temperature-controlled fermentation with a cold stop, and filtration at an ideal acidity/sweetness ratio – in the style of German Prädikat wines. Bottled on a "blossom day" in December 2024. Vegan.
Maturation: No barrel aging, focus on freshness
Alcohol content: 8.7% vol. (9% on the label)
Tasting note: Pale straw yellow with greenish reflections. Intense aromas of white peach, mandarin peel, candied orange, green pineapple, jasmine, green tea, beeswax, and herbs. Fresh and citrusy on the palate, with perfectly balanced sweetness and acidity, and a mineral character. Long, juicy finish. Excellent aging potential.
Food pairing: Ideal with Asian cuisine, spicy dishes, puff pastry desserts such as apple tart, creamy desserts and all variations of foie gras.
