Climate: 2022 was an exceptionally hot and dry year in Galicia. Thanks to water-rich subsoils in Gomariz, full phenolic ripeness was achieved. The vines remained healthy, and the harvest was balanced with good freshness and lower alcohol levels.
Vinification: Hand-harvested into 18 kg crates, selected at the sorting table. Spontaneous fermentation without added sulfur in small open tanks. Natural malolactic fermentation and aging for one year in a 250-liter clay amphora (Clayver model). Bottled in January 2024.
Maturation: 12 months in a 250-liter ceramic amphora
Alcohol content: 11.5% vol.
Tasting note: Medium purple color. Distinctive nose with aromas of violets, red fruits (raspberry, sour cherry, wild strawberry), and herbaceous notes such as tomato leaf, complemented by hints of licorice, flint, and light medicinal nuances. Fresh and soft on the palate, with gentle fruit tannins, medium body, and intense aromatics. Very long, elegant finish.
Food pairing: Ideal with more complex seafood and fish dishes such as turbot, cod or salmon, with white meat, mildly aged cheeses and with finely spiced Asian cuisine.
