Climate: An Atlantic climate with ideal conditions for slow ripening. The 2022 vintage produced excellent grape ripeness, supported by fresh acidity and great aromatic complexity.
Vinification: Hand-picked in perforated crates, sorted on a sorting table. Completely destemmed, soft pressing with compressed air. Pre-clarification at cold temperatures. Natural, spontaneous alcoholic fermentation at 12–15°C.
Maturation: 24 months on the fine lees with batonnage – 12 months in granite tanks and 12 months in stainless steel tanks

Tasting note: A very complex and elegant wine. An intense bouquet with multi-layered aromas on the nose, fresh, rich, and persistent on the palate. Perfectly balanced between ripe fruit, mineral depth, and lively acidity. A wine with great personality and considerable aging potential.
Food pairing: Ideal with high-quality seafood, fine fish, shellfish, and dishes with delicate butter or cream sauces. It also pairs excellently with mature goat and sheep cheese.
