In the glass and in the cellar

Vintage: 2025

Grape: 100 % Tempranillo

Production: 5,000 bottles (0.75 l)

Origin: D.O. Ribera del Duero, Roa de Duero (Burgos)

Vineyard: 35-year-old vines at 820 m

Soils: Clay loam with pebbles on the surface

Climate: Continental, warm days and fresh nights

Winemaking: Hand-picked into 15 kg crates, bunch sorting, vatted at 8 °C, short maceration, free-run juice only with no pressing (lágrima), fermented at no more than 13 °C in an insulated steel tank, two rackings

Ageing: In stainless steel, no oak

A rosé of pure Tempranillo from 35-year-old vines at 820 metres. The grapes go into the tank at 8 °C; after a short maceration the juice runs off without pressing and ferments at no more than 13 °C. Deep strawberry pink in the glass, sour cherry and wild strawberry on the nose, juicy on the palate with some weight and fresh acidity.

With sushi we would choose it over a white. It also works with carpaccio, tartare, rice dishes and soft cheeses such as brie or camembert. The bodega recommends 7 to 9 °C.
