Ageing: 36 months in two French barriques, then 5 years in bottle

On 27 April 2017 the temperature in Ribera del Duero stayed below zero for more than seven hours. The frost cut yields to around 2,000 kilos per hectare at best, and there are 600 bottles of Cayetana. Dense ruby, black fruit, leather and spice, with tertiary notes from the long ageing; powerful on the palate, with silky tannins and great length.
The bodega advises decanting it, or even opening the bottle the day before, and we would take that seriously. Serve it with rack of lamb, aged Ibérico ham or game.

The bodega was founded in 1998 as the continuation of a project that began in 1985 with the Páramo de Guzmán cheeses. It is in Roa de Duero in the province of Burgos, right in the D.O. Ribera del Duero. The owner is Cayetana Santos, and the wines are made by oenologist Mapi Melado. The bodega also has a tunnel almost a kilometre long.
