The bodega's youngest red and, at 100,000 bottles, also its most plentiful. Nine months in barrique, mostly American oak: brioche, caramel, cocoa and toffee sit on top of cherry and violet. Lively on the palate, with fresh acidity, liquorice and soft tannins.
The first pairing on the bodega's own sheet is lamb chops from the grill. It also suits other grilled meat, hare or rabbit. Serve it at 14 to 16 °C.

The bodega was founded in 1998 as the continuation of a project that began in 1985 with the Páramo de Guzmán cheeses. It is in Roa de Duero in the province of Burgos, right in the D.O. Ribera del Duero. The owner is Cayetana Santos, and the wines are made by oenologist Mapi Melado. The bodega also has a tunnel almost a kilometre long.
