Vineyards: vines 22 to 23 years old, farmed organically, fed only with compost

Vinification: fully destemmed, spontaneous fermentation with native yeasts, no enzymes or nutrients, cooled only with water on the tanks, below 25 °C; 2 to 3 days on the skins, drawn off without pressing, press wine is not used; clarified by settling 2 to 3 times during the year, the sediment is discarded
915 bottles of pure Merenzao from the A Burata dá Salamanca plot, the youngest Xcelso Patao we stock. Delicate ruby in the glass, red berries and violet on the nose, fine-grained tannins, herbs and a mineral close.
Young as it is, it needs air: decant it a few hours ahead. Then serve it at 12 to 14 °C with poultry, veal or as a glass to linger over after dinner.

Both honour his parents. Viña Aurita is named after his late mother Aurita, Xcelso Patao after his father, whose nickname is Patao. Despite his age, his father still helps Carlos in the vineyard every day. The two call themselves artisan oenologists.
