Vinification:
The grapes for Xcelso Patao 2020 were fully destemmed and then subjected to spontaneous fermentation with native yeasts, without the addition of enzymes, nutrients, or chemical interventions. After completion of fermentation, or during the final phase, the wine was left to rest for 2–3 days and then separated from the skins without pressing. The press wine was not used but discarded or used for other purposes, such as making vinegar.
The wine was clarified two or three times throughout the year by natural sedimentation, removing the yeast sediment. A few liters were discarded to ensure maximum purity. To control the fermentation temperature, only water was added to the tanks to keep the temperature below 25°C.
Xcelso Patao 2020 displays a delicate ruby red in the glass, highlighting the delicate nature of this grape variety. On the nose, elegant aromas of red berries such as raspberries and cranberries unfold, accompanied by floral notes such as violets, subtle spice, and a clear mineral freshness.
On the palate, the wine presents itself delicately and balanced, with supple, fine-grained tannins and lively acidity. The fruity and floral aromas continue, complemented by a hint of herbs and a mineral finish that reflects the purity and authenticity of the terroir.
Xcelso Patao 2020 is the finest and most delicate wine in the Carlos Carballo range. It embodies the finesse and elegance of the Merenzao grape and is ideally served at 12–14°C with lighter meat dishes, poultry, or as a meditation wine.
