Vinification: fully destemmed, spontaneous fermentation with native yeasts, no enzymes or nutrients, cooled only with water on the tanks, below 25 °C; 2 to 3 days on the skins, drawn off without pressing, press wine is not used; clarified by settling 2 to 3 times during the year, the sediment is discarded
Xcelso Patao is named after Carlos's father, whose nickname is Patao, and it is the finest wine from this tiny cellar. 2020 made 417 bottles of pure Merenzao: pale in the glass, with raspberry, cranberry and violet, some spice and herbs. The tannins are fine-grained, the acidity lively.
Straight after opening it seems delicate; after a few hours in the air it shows different aromas. Give it that time, pour it at 12 to 14 °C and drink it with poultry, white meat or simply after dinner.
