Vineyards: vines 22 to 23 years old, farmed organically, fed only with compost

Vinification: fully destemmed, spontaneous fermentation with native yeasts, no enzymes or nutrients, cooled only with water on the tanks, below 25 °C; 2 to 3 days on the skins, drawn off without pressing, press wine is not used; clarified by settling 2 to 3 times during the year, the sediment is discarded; this vintage with remontage, pumping the juice over the cap for more extraction
At 1,135 bottles, 2021 is the largest Xcelso Patao vintage we know of. This time Carlos pumped over to draw more from the skins, yet it remains a pale Merenzao: raspberry, cranberry, violet, fine tannins and acidity that keeps it fresh.
Our advice: open it in the morning, drink it in the evening. After a few hours of air it changes noticeably. Serve at 12 to 14 °C with lighter meat or poultry.

Both honour his parents. Viña Aurita is named after his late mother Aurita, Xcelso Patao after his father, whose nickname is Patao. Despite his age, his father still helps Carlos in the vineyard every day. The two call themselves artisan oenologists.
