Climate: Mediterranean microclimate with Atlantic influence – hot days, cool nights characterize the terroir
Vinification: Static clarification (débourbage), spontaneous fermentation with natural yeasts without temperature control, in used chestnut and French oak barrels (750 l), fermentation on the full lees with gentle bâtonnage until the end, followed by clarification, maturation in stainless steel tanks and bottling
Maturation: Seven months in stainless steel tanks without lees, followed by bottle maturation
Alcohol content: 13% vol
Tasting note: Pale golden yellow in color with a dense texture in the glass. On the nose, floral and mineral notes accompany aromas of orange blossom, fennel, yeast, fine pastry, and a hint of lactic acid. On the palate, the wine is dense and structured, with a creamy texture, well-integrated acidity, and a long, characterful finish.
Food recommendation: An expressive Godello – ideal with seafood, shellfish such as mussels, crab, and lobster, steamed fish, or aged cheese. Best served at 8–10°C.
