Vinification: hand-picked late August to early September, fully destemmed, spontaneous fermentation with native yeasts, no enzymes or nutrients, never above 25 °C; then 2 to 3 days on the skins, drawn off without pressing, press wine is not used; clarified only by settling and racking, 2 to 3 times a year, without pumps
Ageing: at least 10 months in stainless steel, no wood
The youngest Viña Aurita Tinto, 946 bottles. It was followed by 2023, when Carlos lost more than 70 percent of his crop. The 2022 shows Mencía young and fresh without wood: ruby, red berries, blossom, a little pepper, lively acidity and delicate tannins.
It does not need to wait, but it will also keep for a few years. Drink it with grilled food, game or aged cheese.

Both honour his parents. Viña Aurita is named after his late mother Aurita, Xcelso Patao after his father, whose nickname is Patao. Despite his age, his father still helps Carlos in the vineyard every day. The two call themselves artisan oenologists.
