Vinification: hand-picked late August to early September, fully destemmed, spontaneous fermentation with native yeasts, no enzymes or nutrients, never above 25 °C; then 2 to 3 days on the skins, drawn off without pressing, press wine is not used; clarified only by settling and racking, 2 to 3 times a year, without pumps
Ageing: at least 10 months in stainless steel, no wood
2021 gave 974 bottles, more than twice as many as 2019 or 2020. The style did not change: no wood, no press wine, no pumps. Cherry, raspberry and spice in the glass; acidity, fine-grained tannins and a mineral aftertaste on the palate.

Both honour his parents. Viña Aurita is named after his late mother Aurita, Xcelso Patao after his father, whose nickname is Patao. Despite his age, his father still helps Carlos in the vineyard every day. The two call themselves artisan oenologists.
