Vicente García is the founder and passionate winemaker of the Pago de Tharsys winery in Requena, Spain. Together with his daughter Rebeca, and with great dedication, the family business is dedicated to producing high-quality wines that combine tradition and innovation. The winery is particularly known for its Cavas and distinctive varietal wines.

Origin 

Pago de Tharsys is located in the D.O. Utiel-Requena in the province of Valencia, a region with a winemaking tradition that goes back thousands of years. The winery is based in Requena, known for its ideal climatic and geological conditions that make the production of high-quality wines and cavas possible.

The winemaker family 

Vicente García, founder and driving force behind Pago de Tharsys, is a key figure in Spanish winemaking. Known as the “Father of Cava in Requena,” he brought the region onto the international stage. Together with his wife Ana Suria, he founded the winery in 2002. In the beginning, the estate produced a modest 20,000 bottles per year, underscoring its dedication and focus on quality. Together with his daughter Rebeca and the team, they focus on innovation, quality, and respect for nature to create authentic wines and sparkling wines that reflect the terroir.


Philosophy 

Pago de Tharsys follows a sustainable, terroir-driven approach. The winery places great importance on organic farming, minimal-intervention methods, and preserving biodiversity in the vineyards. Vineyards and terroir

    The Pago de Tharsys vineyards are located at an altitude of 700 meters above sea level. The soils are rich in limestone and clay, which lends the wines structure and minerality.

    The winery works with a blend of native grape varieties such as Bobal and international grapes such as Chardonnay, Pinot Noir and Albariño.

  • Climate
    A Mediterranean climate with continental influence ensures large temperature differences between day and night, which promote optimal ripening of the grapes.

Vinification 

Pago de Tharsys relies on cutting-edge techniques without neglecting tradition. Grapes are hand-harvested and carefully selected. For the cavas, secondary fermentation takes place in the bottle according to the traditional méthode champenoise, with long lees ageing to achieve complexity and elegance. The still wines ferment spontaneously with native yeasts and are aged, depending on the style, in stainless steel tanks, amphorae, or oak barrels.

Distinctive Features 

Pago de Tharsys is among the few wineries that hold the prestigious title of Vino de Pago, the highest classification in Spanish wine. This designation confirms both the excellence of its wines and the deep connection to the estate’s unique terroir.
