Climate: The 2021 vintage was characterized by moderate temperatures and good water availability, resulting in perfectly ripe, aromatic grapes with freshness and structure.
Vinification: Direct pressing with stalks, 48 hours of static settling. Alcoholic fermentation for 25 days at 15°C in new, fine-grained French oak barrels. Following this, 3 months of ageing on the fine lees in the same barrel under slightly oxidative conditions.
Maturation: 3 months on the fine lees in French oak

Tasting Note: Brilliant golden yellow. On the nose, elegant aromas of white stone fruit such as apricot, delicate jasmine blossoms, and a hint of honey, accompanied by mineral notes of lime. On the palate, it's fine and creamy with balanced acidity, a mineral-saline depth, and a long, harmonious finish.
Food pairing: Ideal with grilled fish, seafood, Asian cuisine, poultry with cream sauces or creamy cheese.
