Climate : Mediterranean microclimate with Atlantic influence
Vinification : Static débourbage and spontaneous fermentation with natural yeasts, without temperature control, in used chestnut and French oak barrels (750 liters). Fermentation takes place on the full lees with gentle bâtonnage until complete fermentation. Clarification, aging in stainless steel tanks, and bottling follow.
Maturation : Seven months of aging in stainless steel tanks without yeast, followed by bottle aging.
Alcohol content : 13%
Tasting note: in the glass, the Escalada 2009 displays a deep gold color with amber reflections. Complex aromas of dried fruits, honey, roasted nuts, and subtle spice notes unfold on the nose, reflecting the wine's maturity. On the palate, it is full-bodied and complex, with well-integrated acidity that lends the wine freshness despite its age. Mineral notes recall the slate terroir, and the finish is long-lasting with an elegant salinity.
